Greek Salad with no dressing, I used mustard instead. I also had some homemade "Jambalaya" that I made this week.

Good food and good cals. :)

Serves 3

2 cups cooked rice
3 spicy chicken sausages, diced
6oz cooked shrimp
1 poblano pepper, chopped
4 Tablespoons hot salsa
1/2c black beans
4 scallions, chopped
salt, pepper, garlic to taste

In a non-stick saute pan cook sausages and pepper until cooked through. Add shrimp, beans, salsa, scallions and seasonings until warmed. Add rice and heat through.

Note: I realize this is not an authentic jambalaya, it is tasty and easy though :)
